Mediterranean Chickpea Soup


This soup combines some of the best Mediterranean flavors without being heavy or difficult to make.


Mediterranean Chickpea Soup
Serves 6 - 8

2 Tablespoons olive oil
1/2 cup sliced green onion
2 cloves garlic - minced
3 cans chickpeas - drained
1 can diced tomato
4 cups chicken stock
1 bay leaf
1/2 teaspoon crushed rosemary
1/2 cup freshly grated Parmesan cheese

1. Heat olive oil over a medium flame in a heavy soup pot.
2. Add green onion and garlic and stir briefly.
3. Add stock, chickpeas, tomato, bay leaf, and rosemary.
4. Simmer for 20 minutes.
5. Remove from heat and stir in Parmesan.
